Tofu Broccolini Bowl

The inspiration for this recipe comes from a new restaurant in Seattle that I tried recently. My meal of tofu and broccoli was so simple yet so satisfying and it was COLD. Have you ever tried cold tofu? Well, I never had and I was pleasantly surprised at how much I liked it. In this receipe I was not trying to match the flavors but rather the simplicity of my meal. I simply used some Trader Joe’s Stir Fry Sauce that I had to marinate the tofu in and baked the tofu until all of the sauce was dried up. Then I sauteed the broccolini until it was slightly browned and tender, topped it with sesame seeds and that was it. This whole process took about 30 minutes. The BEST part of this meal was that I ate the COLD leftovers for lunch the next day and it was even more delicious than the night before! Give it a try!

A delicious bowl of tofu and broccolini that you can serve hot or cold!

Ingredients
  • 1 pkg. firm tofu
  • ½ lb. broccolini
  • 1 T. sesame seeds
  • 1 C. Stir Fry Sauce (I used Trader Joe's)
  • Red pepper flakes (optional)
Instructions
  1. Cut tofu into bite size pieces and place on a paper towel lined plate. Cover tofu with more paper towels then place a plate on top of the tofu to press out the water. Let sit for at least 5 minutes, but you can leave longer if you want.
  2. Heat oven to 400 degress.
  3. Place tofu in a bowl and cover with Stir Fry Sauce.
  4. Coat a baking sheet with cooking spray then pour tofu and sauce onto baking sheet. Move the tofu around so pieces are not touching each other. Bake for 20 minutes, turning tofu after 10 minutes, or until most of the sauce has been cooked down.
  5. Place a sautee pan on med high heat and add cooking spray. Sautee broccolini until slightly browned and tender. Remove from heat and cut into bite size pieces.
  6. Toss the tofu and boccolini together and top with sesame seeds and red pepper flakes if using. Enjoy warm right away or place in fridge and enjoy when cooled.
