Flatbread with Avocado and Smoked Salmon

This makes for a quick lunch when you already have my Spicy Tomato Wild Rice Flatbread on hand. I like to warm the flatbread before using it. You can do that in the microwave or in the oven. Then you simply add mashed avocado, arugula and a slice of smoked salmon. That’s it, you’re done and you have a healthly, balanced lunch!
